Cajun Injector Creole Butter Smoked Elk Ribs

Yields: 8-10 servings
Ingredients:
2 pounds elk ribs
5 tablespoons Cajun Injector Cajun Shake
3 tablespoons Louisiana Hot Sauce
1 16 oz jar Cajun Injector Creole Butter
2 cups light brown sugar
¼ cup apple wood pellets
Method:
Heat electric smoker until reached proper temperature of 255 degrees F.
Season ribs with Cajun and hot sauce seasoning both sides of the ribs evenly.
Place ribs in aluminum foil making sure the do not over lap or touch each other. (May need to use two separate sheets of foil.)
Pour creole butter on top of the rib and coat the ribs with brown sugar.
Cover the ribs with foil, double wrapping the ribs will prevent the juices from leaking out.
Close smoker and add the wood pellets. When pellets begin to smoke, cook for about 3-4 hours or until ribs are tender.
