Cajun King Blackened Red Fish

Prep Time: 10 minutes                                                     Cook Time: 10 Minutes                                                  Yield: 4 servings

Ingredients:

4 (6 oz) Red Fish Fillets                                                            1 (1.25 oz) Packet of Cajun King Char-Grill Blackened          Seasoning
2 Sticks Melted Butter

This is a method of cooking meant to be done outdoors unless you have excellent stove ventilation.          

Method:

Chill fish pieces as cold as possible and maintain refrigerated until the moment of cooking. Melt butter and set aside. Heat a grill or cast iron skillet as hot as possible (white hot). Caution: Fish may momentarily flame up when it comes into contact with hot surface. Completely immerse fish in the melted butter: remove and pat on char-grill seasoning. Sear on grill or skillet (creates heavy smoke) let fish cook for about a minute then flip and sear reverse side. Remove from grill when fully cooked fish may look burnt but it is not.
