Fried Sea Trout

Prep Time: 10 minutes                                                      Cook Time: 15 Minutes                                                       Yield: 4 servings

Ingredients:

½ Gallon Cajun Injector Cottonseed Oil                                     4 Sea Trout Fillets                                                                      1 Tablespoon Cajun Shake                                                         2 Eggs                                                                                        1 Cup Milk                                                                                 1 (10 ounce) Packet of Cajun Injector Fish Fry Mix                   2 Tablespoons Original Louisiana Hot Sauce      

Method:

Begin by heating oil for deep frying to 350° F. Season fish with shake and hot sauce on both sides and set aside. In bowl whisk eggs with milk and pour fish fry into separate container. When oil is hot dredge fish in egg wash then threw fish fry to coat well. This procedure can be repeated for a thicker breading. Shake off excess breading and carefully place fish in oil, fry at 350° F until golden brown.
