Alligator Piquante

 

Ingredients:


2 pounds alligator
½ cup flour
½ cup oil
¼ cup parsley
1 tablespoon garlic
¼ cup tomato paste
1 cup chopped green onion

onion
bell peppers
½ stick butter
sausage

Recipe:

Mix oil and flour in skillet and whisk over medium until dark brown
Add onion, bell peppers, garlic, tomatoes, and tomato paste
Stir and let cook for ten to fifteen minutes
Add about 2 ½ cups of water and let it simmer for five to ten minutes
Add alligator, sausage, parsley, green onion, and let it cook for 30 minutes
Add ½ stick of butter and Cajun shake; let it simmer for five minutes

Serve over rice
