Venison Maurice

Ingredients:

Venison Roast
Cajun Injector French Onion Marinade
Cajun Shake
Potatoes
Carrots
Onions
Bacon
Cooking Sherry

Recipe:

Inject roast with Cajun Injector French Onion Marinade; about 2 oz. per pound of roast; place in roasting pan then add potatoes, carrots, and onions; cover roast with bacon strips; add sherry and Cajun Shake to taste.
Cover roasting pan with aluminum foil and place in oven pre-heated to 350; let roast for 1 hour and 15 min; remove foil and let roast for additional 15 minutes to let bacon brown.
