GRILLED DUCK BREAST SALAD WITH
MARMALADE VINAIGRETTE DRESSING
Ingredients
1. Duck breast
2. Cajun Injector Creole Garlic Marinade
3. Cajun Shake
4. 1 cup red wine vinegar
5. 1 cup orange marmalade
6. 1 cup honey
7. 1 cup white wine
8. Chopped red peppers
Recipe
1. Inject ¾ ounce of marinade into each duck breast.
2. Coat with Cajun Shake to taste.
3. Grill duck breasts for 3-4 minutes per side.
4. Place red peppers in a saucepan over medium heat.
5. Add in marmalade, vinegar, honey, and wine.
6. Stir and let cook for 8-10 minutes.
Place duck breast over salad ingredients of choice and pour on vinaigrette
dressing.
