GRILLED RACK OF LAMB WITH HONEY MARMALADE SAUCE AND
SWEET POTATO CHIPS

 

Ingredients 

  1. Rack of lamb
  2. Cajun Injector Roasted Garlic Marinade
  3. Sliced orange for juice
  4. Thinly sliced sweet potatoes

 

Recipe 

  1. Inject lamb with marinade between the bones.
  2. Sprinkle with Cajun Shake.
  3. Place on grill for 10-15 minutes per side.
  4. Pour marmalade and honey into saucepan; stir and squeeze in juice from orange.
  5. Cook over medium heat until sauce reaches a rolling boil and begins to reduce.
  6. Deep fry sweet potato chips at 350 degrees for 45 seconds.
  7. Pour sauce on lamb and serve.
