GRILLED RACK OF
LAMB WITH HONEY MARMALADE SAUCE AND
SWEET POTATO CHIPS
Ingredients
- Rack of lamb
- Cajun Injector Roasted Garlic
Marinade
- Sliced orange for juice
- Thinly sliced sweet potatoes
Recipe
- Inject lamb with marinade
between the bones.
- Sprinkle with Cajun Shake.
- Place on grill for 10-15
minutes per side.
- Pour marmalade and honey into
saucepan; stir and squeeze in juice from orange.
- Cook over medium heat until
sauce reaches a rolling boil and begins to reduce.
- Deep fry sweet potato chips at
350 degrees for 45 seconds.
- Pour sauce on lamb and serve.
