Hickory Smoked Turkey

Prep time:  20 minutes                                                      Cook time:  7 hours                                                         Yield:  8 servings

Ingredients:

1 (10 to 12 lb) Turkey Cleaned                                               12 Ounces Cajun injector Hickory BBQ Marinade                  TT Cajun Shake                                                                       1 Cajun Injector Electric Smoker                                              ⅓ Cup of Favorite Flavor Smoke Pellets

Method:

Start out by trim any excess fat from the turkey. Inject the turkey with the Hickory Cajun Injector using 2 ounces per pound. Generously season the turkey with Cajun Shake inside cavity and outside.  Set the temperature setting to 225°F and the timer for seven hours.  Place meat on the rack in the Cajun Injector Smoker and load ⅓ cup of smoke pellets of your choice in the chamber and rotate to empty into the smoke chamber. Smoker turkey for 20 to 30 minutes a pound, turkey is cooked when internal temperature reaches 170 °F on a meat thermometer.
